His small flock of rare breed Jacob sheep produces a crop of lambs every spring which are grown entirely on their mothers' milk and natural pasture, without any supplements of grain or protein.
This creates a unique taste experience, the meat is really tender and sweet, and one of the most natural products you can buy.
Because the breeding cycle of these sheep is in tune with the seasons, lamb availability is restricted to the autumn and early winter months.
