Since April 2021, we began making Fresh Cheddar, gathering flavours from wood & garden, and even seaside, bringing variety & fun to your Cheeseboard.
So now, we bring you 'Medium Cheddar', cheese that has been aging gracefully, deep in the Cellar, for 4 months or more - whilst microbes & enzymes perform their wonderwork of transforming texture & flavour into something truly memorable & unique.
Not your typical Cheddar - this has a slightly more crumbly texture, and has an aftertaste somewhat reminiscent of Cheshire Cheese - this may be the effect of our local 'terroir'...
